This evening I am having a friend over for dinner. I love to start with wine, and an assortment of wonderful cheeses.
The main course was seared scallops, over a bed of fresh corn, wild rice, and Tasso ham. Topped with a drizzle of a warm garlic cumin vinaigrette.
The vegetable for the evening was a delicious stack zucchini salad. There were layers of thinly planked zucchini, pea pesto, buffalo mozzarella, shaved parmesan and baby tomatoes. This salad was fresh, and light. Loved by all!
