Roasted Tofu Stuffed Portabella Mushroom Cap

Bonjour, Y’all!!!

There is so many thing you can do with tofu. One of the ways I like to make it is by roasting it with south west seasoning, poblano, bell peppers and corn. We stuffed a large portabella mushroom with the tofu and topped it with an avocado sauce and placed on a bed of kale.
